报告人简介：

Vathida Chimsonthorn holds an M.Sc. in Agricultural Education from King Mongkut’s Institute of Technology Ladkrabang, Thailand (2022). Her research focuses on preharvest chitosan and salicylic acid treatments and their effects on postharvest quality and bioactive compounds in edible sprouts, with publications on quality preservation and antioxidant activity. At Chulalongkorn University, she works on food product development, sensory and quality evaluation, shelf-life assessment, scale-up, and quality control, linking postharvest research to practical food processing and value-added product development.

This talk links postharvest science with value-added food development, presenting research on preharvest chitosan and salicylic acid treatments and their effects on postharvest quality, bioactive compounds, and antioxidant activity in edible sprouts. It also draws on practical experience with sweetened pickled mango—covering formulation, sensory quality, shelf-life, and scale-up—to show how laboratory research, pilot-scale processing, and consistent product quality are connected.
